Serradura ❦ Portuguese “Sawdust Pudding”

I can think of no faster or easier pudding to throw together at the last minute. Serradura which is Portuguese for sawdust, is a classic Portuguese dessert. North to south, you will find it in most restaurants. Why so popular? It is simply delicious.

Need a dessert to take to a friend's party? Forgot to make dessert for your dinner party? Kids need a dessert for the school fair? This is your saviour! With just three ingredients, it is rich, indulgent and delicious. Did I mention fast? I add vanilla bean paste, but it is totally optional. 

Using clear glasses to show off the layers is a must. So what are you waiting for?

A little advice? Double the recipe. Every time I make this dessert it dissapears! Taste it for yourself, I guartentee it will be a keeper in your go-to recipe book.

 Serradura Portuguese “Sawdust Pudding”

4-8 servings depending on your cup size

 

 

800 ml. Double cream, very cold

1 can (397g.) Condensed Milk

1 tsp. Vanilla bean paste, such as Nielsen-Massey (optional)

1 pack (approx. 200 g.) Rich Tea biscuits ( Bolacha Maria in Portuguese)

 

1. In a large bowl beat double cream until stiff peaks form. 

Add condensed milk  slowly and vanilla extract. Mix with a wooden spoon until well incorporated. Be careful not to over mix or you will end up with butter!

 

2. In a clear glass dessert cup or trifle dish (you’ll want to show off the layers) 

Spread a thin layer of cream and alternate with biscuit crumb. 

 

3. Do not add too much biscuit, as you want the cream to soften them or it will turn out dry. 

Finish with a layer of cream. 

Cover with cling film and refrigerate for a minimum of 3 hours before serving.  

 

4. The finishing layer is crumb, but I like the top layer crunchy, so I  top with a fine layer of biscuit only at time of serving. You can decorate using a biscuit half.
