Today's blog post is not a recipe at all, rather a quick shortcut for a super fast easy way to make pizza at home in under 15 minutes. That's right! No pre-heating your oven or pizza stones required. My method produces restaurant quality pizza using a good quality, fresh store bought pizza.
What makes a pizza so good? It is the dough of course!
Supermarket pizza has come a long way, with some even boasting being produced in Italy, using Italian flours. Tesco's Finest range, Waitrose and Sainsbury's all have gorgeous varieties. Delicious wood fired varieties are exceptional and rival any good High Street Pizzaria chain. I am not talking about the frozen variety here folks, or the "make your own" at the deli. No, that dough is inferior.
I like to start with their "Best Range" as a base and add my own toppings, including fresh Burrata cheese and cracking an egg on top.
Not only will this be the best pizza you've ever eaten...it will be totally personalised.
Making dough at home is fine, but it will lack the flavour of these pizzas simply beacause alot of them are made from mother yeast starters. These taste remarkable and are much better than the takeaway variety.
Top with your favourite leftover cooked meats, fish, deli meats, cheeses, vegetables and even an egg. I make these in my gas bbq. If you do not have one, you could always bake them in an oven, but for that delicious taste that kicks it up a notch you could do this.
Put a large non-stick, oven safe, frying pan or griddle on the hob on high heat. Do not add any oil. Once smoking hot, add pizza, and top with all the yummy "extras", cook a few minutes until crust starts to brown and crisp.
Now place the frying pan under a hot oven grill, leaving door slightly open. Grill until cheese bubbles and pizza browns to your desired doneness. Heaven :)

Here I topped a white pizza (mascarpone sauce) with left over salt cod chunks, roasted red peppers and Kalamata olives and fresh mozzarella.
This one was definitely a winner. A classic Margerita pizza topped with leftover grilled salmon, fresh baby plum tomatoes fresh mozzarella and pesto.
These idividual pizzas were to die for. Grilled chicken, asparagus tips, prosciutto and jarred chargrilled pepper antipasti. The beauty of this is using what you have at hand. Dinner on the table in less than 20 mins.
My favourite way to do it is to throw it on bbq, medium heat, lid closed. 10 minutes to heaven.
