Proscuitto Wrapped Figs and Brie with Maple Syrup ❦ Embrulos de Figos Frescos Presunto Queijo Brie com Xarope de Ácer

This darlings is simply the sexiest, most decadent, most delicious, appetiser recipe in the world. Figs are one of my favourite fruits. Ripe, sweet and beautiful to look at. If a fruit can be sexy, then figs definitely win. My maternal grandparents are from the Algarve region of Portugal and for 6 years they also lived in Morocco. I can tell you I have eaten a lot of figs. One of my earliest memories while on holiday was eating my grandmother's homemade fig jam. I will have to share her recipe here soon. 

With Easter just around the corner and Lent almost over, you're just one fig away from a deliciously, sinful experience. You can substitute the prosciutto for Serrano ham, presunto, pancetta or streaky bacon. I used maple syrup, as I think it works better than honey, but you can use honey if you prefer. I promise you can't go wrong here.

Proscuitto Wrapped Figs and Brie with Maple Syrup ❦  Embrulos de Figos Frescos Presunto Queijo Brie com Xarope de Ácer

Makes 12

Serves 6, I allow 2 per person

 

6 Ripe fresh figs, cut in half lengthwise

6 Proscuitto slices, cut in half

1 Brie triangle wedge, cut into 12 thin, 1inch squares. You will have leftover cheese, but this is the smallest size they sell.

Freshly cracked black pepper to taste

Fresh thyme to taste, a few sprigs will do

12 tsps. Real Canadian maple syrup or dark honey

12 cocktail sticks/ toothpicks to secure

 

1. Pre-heat oven to 180° c./ 350° f 

Line a baking sheet/tray with greaseproof paper

 

2. Slice figs in half lengthwise. Place one square of brie on cut side of fig and lay the proscuito slice on top of the brie centred, wrap with proscuitto slice sides around the back of fig and secure with toothpick. Stand upright on baking sheet. 

 

3. Once all figs are on sheet, drizzle 1 tsp. of maple syrup onto each one. Sprinkle on freshly cracked black pepper and adorn with thyme leaves. 

 

4. Bake in centre of oven for 8-10 minutes or until proscuitto is crisp and cheese bubbling.
