No-Measure Chocolate Cake

What can be simpler than a cake that requires no scales, no measuring cups and no teaspoons? All you need to make this cake is a mug. YES! A plain old mug. Forgot about the school bake sale? You can whip this cake out in 30 minutes. I didn't come up with this recipe, in fact, I think there isn't a Portuguese person on the planet who doesn't have their own version of a mug cake. In Portugal , a chavena, is an actual legitimate measure. My mother made a similar one with yogurt. The empy yogurt cup used to measure the rest of the ingredients. Since you use the mug to measure the ingredients, you always get a perfect result. You will instantly turn into a star baker! This recipe was given to me by a neighbor while living in Portugal. Thank you Christina:) She uses warm water, but coffee would work too. Coffee really enhances chocolate, so you really can't go wrong. This cake is moist and delicious. Top with a dusting of powdered sugar, frosting or just fresh fruit. My hubby likes a scoop of icecream with his. Make it yours. I personally reduced the sugar to just 1 mug and it was perfect:)

No-Measure Chocolate Cake

Makes 1 tall 12 inch cake

4 Free-range eggs

1/2 Mug unsweetened-cocoa

1 Mug sugar

1 Mug vegetable oil or unsalted melted butter

1 Mug Very hot water or strong, hot black coffee, unsweetened

2 Mugs self-raising "00" flour

1. Grease a tall spring form cake-tin with butter and line with baking/parchment paper. Set aside. You can also split batter between two tins.

2. Pre-heat oven to 170°c./340°f

3. In a large bowl, beat eggs and sugar until incorporated.

Add remaing ingredients and stir well to incorporate.

4. Pour into cake tin/s and place on middle shelf of pre-heated oven for approximately 30-40 mins. for single cake/ or when knife inserted in centre of cake comes out clean.

If making two smaller cakes, reduce time by half.
